Spicy Sweet Potato Hash

This evening I was treated to a delicious dinner prepared by my begrudging husband…he just didn’t plan on having to make dinner, but we were both wicked pleased with outcome.

Had I been cooking it would have been baked sweet potatoes with Chick’ Patty Sandwiches…nothing fancy or exciting there.

On Saturday I checked a book out of the library that had tons of recipes in it. The author is Robin Roberston and it’s called Vegan Planet with nearly 600 pages (holy cow). This was a dinner from that book and it was so simple to make. If you’re looking for TONS of vegan recipes, this is the book for you. She published it in 2003 so it’s been out awhile; I think she’s currently working on a new one. Be sure to give it a try.

Sweet potato, canola oil, onions, roasted red peppers, veggie burgers, cayenne and salt & pepper.

Pretty simple, very delicious and a meal we will make again and again. (I wanted to add something green to this but Dave wouldn’t let me, telling me I should just accept that it is an orange, red and brown meal.)

On another note, I went out walk/jogging again today and I did even better than my first day out, shaving 3 minutes off my time. I have an excellent “trainer”, aka hubby Dave. He knows how to get me moving apparently. I’m looking forward to seeing the effects this has on my body after I manage to make this a habit. Right now it just makes my face red.

It’s funny how doing something good for your body makes you feel so good. I know my body hasn’t changed yet, but inside I just feel like I’m doing something really great for the long run of my life. It’s about time.

Sadly, the end of the weekend is approaching and I must get ready for the work week…have a nice evening all.
